Our own Gurdeep Ahluwalia (the Pooja & Gurdeep Show) shares his sought-after recipe:

Put 2-3 pieces of bacon on a parchment paper lined baking tray. Drizzle with maple syrup and bake for 12-15 minutes at 350 degrees Fahrenheit.

Generously butter two pieces of your bread of choice on the outside only.

Pick 2-3 of your favourite cheeses (sharp cheddar, gouda, Monterey Jack, Gruyere, Pepper Jack and brie all work well) and layer 2-3 pieces on each piece of bread.

Put a little oil on your pan/griddle (the oil AND butter may seem like overkill, but they’re not – trust me).

 

Put your two pieces of bread in the pan / on the griddle – butter side down. Cook on a low heat for about five minutes (depending on how crispy you like your grilled cheese).

Add two thin slices of roma tomato to one open faced side of the sandwich

Add the cooked bacon slices on top of the tomato, then put the other side on top.

Gently squish down – cheese oozing out a little is good.

Cut diagonally (the only way to cut a grilled cheese) and enjoy!
