Mike’s wife Debbie makes the most amazing Lasagna Soup, here’s the best thing we can share with you today.
1lb extra lean ground beef
1 box low sodium chicken broth
1 can light tomato soup
2 cups water
1/4 cup red pepper diced
1/4 cup green pepper diced
1/4 cup onion chopped
1 1/2 tsp Italian seasoning
1/2 tsp black pepper
1 small can Italian tomatoes
2 cups of broken up pieces of lasagna noodles
In a large dutch oven or heavy based pot, brown ground beef on med high heat. (drain off fat )
Add onion, red pepper, green pepper, continue to sauté until onions are slightly soft.
Add broth, soup, water, garlic, Italian seasoning, pepper and Italian tomatoes. ( dice tomatoes if pieces are too big )
Heat to boil, stirring occasionally. Stir in pasta and reduce heat.
Cover and cook at a gentle boil until pasta is tender about 15 minutes, stirring occasionally.
